As the weather starts to heat up the Tuna Summer Salad can be used as a side dish at barbecues or simply as a light meal.
- 2 oz tuna (or Bumble Bee tuna packet)
- 3 oz shredded carrots
- 50g sliced red peper
- 2 tsp stone ground mustard
- Combine all of the ingredients in bowl and add 1 tbsp sunflower seeds, salt and pepper to taste, and a splash of red wine vinegar
- Serve over baby spinach greens.
