- 1 medium sweet potato
- 1 tbsp coconut or olive oil
- seasonings to taste: salt, pepper, cinnamon, paprika, nutmeg, garlic powder, the options are endless!
- Slice potato lengthwise into “fries” about 1/4 inch thick.
- Pour oil into a large bowl, add fries and toss to coat.
- Sprinkle with desired seasonings. Spread fries onto a baking sheet coated with low-cal cooking spray.
- Bake at 400 degrees for 20 minutes, turning fries half way through.
