- One half each: red, yellow, orange, green bell pepper- sliced
- Half a red onion, sliced
- Two cups sliced mushrooms
- One Avocado
- One tsp olive oil
- One tbsp lime juice
- Half teaspoon each: cumin, garlic powder, pepper, chili powder
- Dash of cayenne pepper
- Sauté the vegetables in oil over medium/high heat.
- Add the lime juice and seasonings. Stir occasionally until vegetables are soft.
- Serve over a bed of spinach or tortillas. Top with half the avocado.
