The Instant Pot is one of my new favorite kitchen products. It’s basically a “slow cooker” that cooks the food in a fraction of the time. This tasty recipe would normally take 6 – 8 hours in a slow-cooker and in the Instant Pot it’s only 90 minutes!
Note: if your not using an Instant Pot, you can cook this shredded beef in a slow cooker on low setting for 6 hours.

Mayonnaise is a key ingredient in many recipes that are staples at backyard BBQs, picnics or summer parties: tuna salad, egg salad, and potato salad just to name a few. The problem is, most mayos you find at the store contain unhealthy oils, refined sugars and loads of sodium. This presents an issue for those who are living a clean eating, low processed foods lifestyle.

The benefits of using avocado mayo (technically called avocado oil mayo) is that it usually consists of only a small number of ingredients, is sugar free, dairy free, and free of processed oils.
Full disclosure – for dietary reasons I don’t eat regular mayo or avocado mayo but my husband does. He has permanently substituted regular mayo with avocado mayo and has reintroduced a variety of recipes back into his diet. Check out this Summer Salad recipe as an example.
