- 3 egg whites
- half a tomato
- 1 cup sliced zucchini
- 1/2 cup sliced mushrooms
- 1/2 cup kale
- To taste: cumin, chili powder, garlic powder, salt, pepper
- Saute’ mushrooms and zucchini with seasonings until they are 3/4 of the way soft
- Add tomato, kale and egg whites. Cover and cook on low/med heat until egg is solid.
- Top with Frank’s Red Hot sauce if desired.
