Great substitute for white or brown rice when you are trying to find a lower carb side dish.
- 1 bag fresh already riced cauliflower
- 1 tbsp potato starch
- 1/2 cup light coconut milk
- 1/4 cup fresh cilantro
- 1 tbsp coconut oil
Heat oil in pan, add cauliflower and coconut milk.
Heat until coconut milk boils, stirring frequently.
Add potato starch and stir until milk thickens.
Stir in cilantro.
Season with salt, pepper, and garlic powder. Serve with this Instant Pot Shredded Beef recipe.
